Ingredients:

  • 1 cup cooked black rice

  • 1/2 cup full fat coconut milk (I like canned here)

  • 1 tablespoon pasture raised butter, ghee or coconut oil

  • 2 tablespoons maple syrup

  • 1 tablespoon ground flax seeds

  • 1 thick slice ginger

  • pinch of cinnamon

  • pinch of cardamom

  • pinch of salt (this makes it sweeter)

  • fruit for topping (i like banana, pineapple, mango & raspberries)

  • chopped nuts or seeds for topping

  1. Combine everything in a small sauce pan and cook for 5 minutes, stirring often until some of the liquid has been absorbed.

  2. Serve in a bowl and top with fruit and chopped nuts or seeds.
