1 cup cooked black rice
1/2 cup full fat coconut milk (I like canned here)
1 tablespoon pasture raised butter, ghee or coconut oil
2 tablespoons maple syrup
1 tablespoon ground flax seeds
1 thick slice ginger
pinch of cinnamon
pinch of cardamom
pinch of salt (this makes it sweeter)
fruit for topping (i like banana, pineapple, mango & raspberries)
chopped nuts or seeds for topping
Combine everything in a small sauce pan and cook for 5 minutes, stirring often until some of the liquid has been absorbed.
Serve in a bowl and top with fruit and chopped nuts or seeds.
