Easy Almond Cake
1 stick (8 tablespoons) of pasture raised unsalted butter (or Ghee or Coconut Oil), melted and cooled slightly, plus a little more for greasing
4 pasture raised eggs
1/3 cup maple syrup or sugar
1/2 teaspoon vanilla extract
good pinch of salt
2 cups finely ground almond flour
1 1/2 teaspoons baking powder
Other great flavoring ideas:
1/2 teaspoon almond extract
1 teaspoon orange blossom water
sub out half the sugar for honey
1/2 teaspoon cinnamon or cardamom
the zest of a lemon or orange
Preheat the oven to 350 degrees. Butter an 8”square or round cake pan and line the bottom with parchment if it is not non stick.
In a large bowl, whisk together the butter, eggs, sugar, vanilla and salt. Switching to a rubber spatula, fold in the almond flour and baking powder. Once mixed, scrape the batter into the cake pan.
Transfer the pan to the oven and bake for 25 minutes or until a skewer or knife comes out clean.
Let cool for at least 20 minutes before serving. If you have leftover cake, it will keep very well wrapped in plastic at room temperature.
