Easy Homemade Granola
makes about 4 cups
This super easy granola recipe is more of a blueprint with lots of suggested add ins. Here I’m giving you the basic recipe, what you need to start with, and then you can make it your own.
2 cups rolled oats
1 cup pumpkin seeds
1/4 cup pure maple syrup
1/4 cup avocado, grape seed or melted coconut oil
1 teaspoon kosher salt
1 teaspoon cinnamon
1/4 teaspoon cayenne pepper (optional, but I like it)
Unsweetened shredded coconut
A pinch of cardamom
A few grates of nutmeg
Ground Flax Seeds (stirred in once the pan is out of the oven)
Heat your oven to 350 degrees.
Combine all the ingredients in a large bowl, toss to coat.
Spread the granola out, in one even layer, onto a large rimmed baking sheet.
Bake for 25-30 minutes, tossing 2-3 times. You want it to look toasted but not burnt, so keep checking it.
Remove from the oven. Let cool and then transfer to jars.
